Peanut Butter Balls

Peanut Butter balls

Ingredients

  • 14 Medjool dates, pitted
  • 200g peanuts (or hazlenuts)
  • 4 tbsp 100% natural peanut butter
  • 1 tbsp cacao powder
  • 1-2 tbsp water, if needed

Method

  1. Line a baking tray with baking paper.
  2. Place all of the ingredients into a food processor and blend until a dough begins to form.
  3. Using your hands, roll tablespoonfuls of the mixture into snack-sized balls.
  4. Pour the crushed peanuts onto a plate or flat surface and roll the balls in the nuts to coat.
  5. Return them to the prepared tray and refrigerate for 30 minutes.

Lemon mini loaf cakes

Raspberry & Coconut Loaf

Ingredients

  • 175g coconut flour or oat flour
  • 25g desiccated coconut – bit extra for topping
  • 1 lemon – zested
  • 2 tsp baking powder
  • 3 eggs
  • 5 tbsp honey or maple syrup
  • 100g raspberries


1.In a mixing bowl mix together the almonds, desiccated coconut lemon zest and baking powder.

2.Whisk in the eggs and honey and give a good stir, then fold in the raspberries.

3.Add to a lined baking dish (loaf tins are the best)

4.Bake in the oven at 180c for 60 mins until cooked through. If going very brown on top, turn down the heat slightly.

French Toast

Blueberry

French Toast

Method

  • 2 Slices of wholemeal bread
  • 1 egg
  • 1 tsp cinnamon
  • 1 tsp coconut oil
  • 2 tsp honey/maple syrup
  • 40g blueberries


  1. Toast the bread slightly in a toaster until slightly crisp.
  2. In a bowl, mix together the cinnamon,coconut oil,egg and honey.
  3. Place the toast into the bowl mixture and soak on both sides until covered.
  4. Heat a frying pan, and then add on the two pieces of toast and cook on both sides until browning.
  5. Serve with a drizzle of honey and the blueberries
